These systems are ideal for treating raw hams on catenary mechanisms, racks and frames, or frames suspended from overhead rails. They ensure highly effective yet delicate washing and sanitizing of the ham, with just a minimal amount of product being removed.   • CIP (Clean In Place) self-washing program which preserves and purifies the production lines of organic and inorganic contaminants. CIP is a self-washing automatic system for all circuits, walls and key points of the machine which does not require disassembly. This is carried out through the introduction of detergent fluids at a specific pre-set concentration, pressure and temperature and constantly monitored, followed by careful washing and sanitization.
  • Drying system using a new technology designed and developed by Colussi Ermes able to combine optimal drying capacity with minimum consumption.
  • Constant monitoring of all parameters in compliance with HACCP standards (Hazard Analysis and Critical Control Points). This program allows the operator to have full control of the critical points to ensure hygiene.

The special Colussi Ermes ham washing systems are equipped with exclusive technology and are tailor-made to meet all technical or production requirements of the customer:

  • Systems on catenary mechanism, up to 180 hams/hour, ensuring maximum hygiene.
  • Small compact tunnels, for washing prone hams, with high washing capacities of up op 700 hams/hour.
  • Medium and large systems, cabin or tunnel versions, with capacities of up to 140 sticks/hour for suspended hams on sticks of 1200 to 1500 mm. The hams can be suspended from wheeled racks, on frames moved by AGV or frames suspended from overhead rails, for washing up to 30 cycles/hour.
